Howard has been the local rock star of French bread for a long time now, but not everyone knows about his stellar Bialys, or for that matter, even what they are. A friend of mine nailed it when he said, “Oh, I get it. It’s a Jewish English Muffin.”
Yup. A crispy, daintier version of a bagel with a hint of sauteed onion in the middle, these are best toasted and shmeared with a bit of Kate’s sea salted butter (buy Kate’s at the Local Beet in Chester). Howard doesn’t have a website but look for the line at Lyme Farmer’s Market on Friday afternoon and Chester Sunday Market on, duh, Sunday.
