Frogmore Stew

There are other things to boil in the summer besides corn and lobster. If you’re bored of the burgers and grilled chicken routine and have a crowd descending for dinner, my vote is a Frogmore Stew. This spicy seafood boil of new potatoes, kielbasa, shrimp, and fresh corn is seasonal, simple, and well, just plain fun to eat. Utensils are optional. Just pour the whole mess on a table covered with newspaper and dive in.

Serves 8 to 10

Ingredients:

6 quarts water

1/2 cup Old Bay Seasoning

2 pounds baby red potatoes

2 pounds kielbasa or andouille (if you prefer your sausage spicy), cut into 2 inch pieces

8 ears corn cut in half or thirds

4 pounds large unpeeled shrimp

Directions:

  1. Boil water with Old Bay in large stockpot
  2. Add potatoes, return to a boil and cook uncovered for 15 minutes
  3. Add sausage and cook for 5 minutes
  4. Add corn and cook for 5 minutes
  5. Add shrimp and cook for 3 to 4 minutes.
  6. Drain and dump on a table or large tray covered with newspaper.
