Mushroom Quinoa Risotto

Rachel Carr, chef/owner of Six Main in Chester shared her fantastic Mushroom Quinoa Risotto recipe with us!

2 Tablespoons coconut oil
1 cup cooked quinoa
1 clove garlic
1 Tablespoon tamari
1 Tablespoon chopped fresh sage
2 Tablespoons nutritional yeast
1/4 cup sliced shiitake mushrooms
¼ chopped spinach or other greens
¼ cup chopped red onion
1 Tablespoon red wine (optional)
1 cup cashew, almond or coconut milk (see recipe below)
Salt to taste

In a sauce pan, saute the onions, garlic, mushrooms and greens until onions are transluscent.  Add, quinoa, milk, tamari and nutritional yeast and salt to taste. Cook for a few minutes on low until liquid reduces and risotto is thick and creamy.
