And then there’s Cafe SoL. Inside this bustling eatery, the happy-to-be-doing-what-they-love owners and staff are busy dishing up fantastic 12” quesadillas (we love The Cowboy – tangy bbq chicken, peppers and cheese), vats of soup, creative breakfast sandwiches (served with Ashlawn Farm Coffee or housemade chai) from mainly locally-sourced and organic ingredients. But what we never even attempt to resist is their signature treat: a giant sweet and salty cookie, studded with M&M’s and potato chips. Wait, can we just say how much we love it here?
