Coconut Cream Pie at Sift Bake Shop
By Elizabeth Rubin
One of my favorite daycations is just up the road in Mystic, and my first stop is always Sift Bake Shop. It was late morning, and I just made it in the door before a swell of sweet-seeking visitors filled the bright space.
Tortured by the cases of croissants, French pastries, and macarons on offer, I finally decided on (weirdly) the Coconut Cream Pie. This sophisticated version of the classic would be an elegant and dazzling dessert for an engagement party or ladies lunch. It’s not a stretch to say it’s a veritable symphony of flavor and texture: coconut dacquoise, coconut mousse, crispy coconut praline, coconut milk jam, and caramelized white chocolate.
Seated elbow to elbow at the window bar with other happy snackers, we compared our treats: one showed off the Raspberry Chocolate Tort made with a delectable combination of chocolate sponge cake, dark chocolate ganache, raspberry pate de fruit, macerated raspberries, chocolate mousse, and milk chocolate raspberry glaze. Another shared her love for, in her words, “the perfect Carrot Cake”, roulade style.
Through its sweet creations, Sift not only fosters a shared gastronomic experience but if you’re a Food Network fan, a table by the exhibition window is the best seat in the house.
