STRAWBERRY AND SAGE by Carlson’s Landing

INGREDIENTS

  • 1.5 ounces of Tito’s Vodka
  • 4 sage leaves
  • .75 ounces of freshly squeezed lemon juice
  • 1 ounce of homemade strawberry simple syrup

INSTRUCTIONS

In a cocktail shaker with ice, shake all ingredients until the outside of the shaker becomes frosty. Fill a red wine glass with ice cubes and pour the mixture through a fine-mesh strainer to ensure there are no bits of sage in the cocktail. Top the rest of the glass off with prosecco. Top with a halo of strawberry foam and a single leaf of fresh sage.

Strawberry Simple Syrup– Bring to a boil equal parts sugar and water. Add cleaned and de-stemmed strawberries. Boil for roughly 10 minutes or until the strawberries start to soften. The final product should be the viscosity of agave nectar.

Strawberry Foam – Puree cleaned and destemmed strawberries in a blender and put it through a fine-mesh strainer to separate the seeds. Using the remaining liquid, fill an ISI canister (used to whip/foam liquid) to the fill line and add one egg white. After the canister is sealed and charged with a nitrous cartridge the foam can be stored and kept cold until ready to garnish cocktail.
