After a lengthy painstaking restoration on the “little house” nestled in the corner of Chester village, Little House Brewing Company has opened to rave reviews. Chester native, Carlisle Schaeffer, and his mid-western business partner, Sam Wagner, shared equal enthusiasm for both cross-country running and craft beer during their years at Vassar as Science, Technology, & Society majors. Carlisle spent his post-college years as an apprentice at Cottrell Brewing Company in Pawcatuck (oh, and he also worked here at The E List on our events calendar) and quickly moved his way up to Head Brewer, while Sam worked as a marketing science analyst back in Minneapolis. The two have now pooled their experience which ranges from chemistry to marketing to homebrewing and opened a tidy, tasty brewery. The historic 1836 building now features state of the art equipment and lots of comfortable seating, plus a magical beer garden under a canopy of hops and strings of twinkly lights out back.

I’ve already been a number of times and continue to order flights as I can’t decide which one I like best. I may have narrowed it down to Water Feature — a Honey and Coriander Gose which is deliciously sour and faintly salty. But the menu changes as the beer is brewed. So, expect a variety of IPA’s, stouts, lagers and plenty of styles you’ve never heard of.
