Three Fates, Chester’s Newest Hangout

Obviously, I never gatekeep, but if I could, this one qualifies! I fell head over heels for this new coffee and wine bar in Chester.  Owner Tiffany Nevers and her team have worked magic on the old Post Office space, turning its stone-walled interior into the coziest, chicest hangout.  Plus velvet chairs, a handmade, undulating wooden bar, and those original stone walls, along with a tempting menu of small plates, create that indefinable thing we always crave in a restaurant. A vibe. An immediate plan to return. Even better, I usually feel awkward dining solo around here (oddly, never in NYC), but at 3 Fates, I perched at the bar and soon found myself sharing plates with a fellow diner.

Now, the food: every dish feels considered yet approachable. I went for the mortadella sliders (seriously, when was your last mortadella moment?) and the Wellstone Farm Asparagus. The sliders were generous enough to share, which led to a happy empanada swap with my neighbor at the bar. Imagine fresh focaccia layered with pistachio pesto and stracciatella, bursting with flavor. Then came a tumble of asparagus, perfectly cooked and showered with black garlic, Parmigiano, and pangrattato. Next time, I’m eyeing the smoked trout rillettes and chicory salad. The menu is a delight! Drinks here are more than just creative cocktails. The Serious Inquiries Only is a not-too-sweet blend of gin, homemade blueberry syrup, lavender, and lime, with a dash of wormwood for a hint of anise. It’s a drink to linger over. And if you’re skipping alcohol, there are plenty of tempting options, too. I think you’ll love this spot as much as I do, so save me a seat at the bar.
