Tonie Marie’s Gluten-Free and Gorgeous Cakes
I have a love/hate (mainly hate) relationship with social media, but occasionally I discover something exciting, and my latest is Tonie Marie. This cottage baker based in Lyme has been churning out flavorful macarons for farmers’ markets and special orders. Baking is her passion, and when a gluten-free neighbor asked if she could create some edible treats, she got going and hasn’t stopped.
I flipped over her number (or letter) cakes (not gluten-free), bright and happy, and decorated with homemade jams, ganache, fruits, and macarons. She’s expanded her repertoire to cake-size macarons filled with jam and frosting, a brilliant take-along for a picnic dessert or a gluten-free friend. Another popular item (especially in the age of Covid and single servings) are her macaron towers which you can order in two sizes (40 or 80 cookies).
