Southern Style, Scratch-Made Breakfast at Water Street Waffle Company, New London
The second we heard about The Water Street Waffle Company in New London, our interest was piqued. After drooling over their tempting online menu, my BFF Carol and I made a pact to skip breakfast and save our appetites for Saturday brunch. Stepping inside felt like being whisked straight to the French Quarter, with vibrant murals, strings of Mardi Gras beads, and a festive energy in the air.
We slid onto barstools and eyed the menu, torn between towering waffles stacked with house-made sausage, diving into a bowl of shrimp and grits, or feasting on Lobster Benedict.
We kicked things off with a rainbow-bright Mimosa flight (dragonfruit and blackberry were hits) and nibbled on warm biscuits showered in cinnamon sugar and drizzled with bourbon maple syrup.
Trinity, our upbeat and ever-helpful server, steered us through the menu. I finally settled on The Original: a light and fluffy liege waffle layered with Vermont cheddar, house-made chicken sausage patty, and fried eggs (on the side for me), plus a generous helping of home fries and tater tots—because why choose?
Carol went all in with The Terminator: three mini waffle sliders: bourbon bacon and Vermont cheddar, chicken sausage and sauteed veggies, pork sausage, jalapenos and pepper jack; each topped with an egg. We could easily have shared either dish; the servings are massive!
We lingered, swapping stories with fellow diners and sneaking peeks at the parade of steaming plates passing by.
We fell in love with this place, as much for its lively vibe as for the unforgettable scratch-made food, and we’re already plotting our return for another mini Southern-style vacay. Arrive hungry!
